I don't really want to be setting this up as another desktop, so I set it up for remote access from my main Windows 7 machine with two big monitors. It turns out that the more recent Mac OS versions have a decent built in VNC server, so you can just turn that on using the system preferences -> sharing dialog. For now, I turned off all other sharing. The default IP it came up with is ejbimac.local. I installed TightVNC reader on my win7 machine and it did manage to connect, though the first time it took a long time.
